I’m a huge cupcake fan and red velvet is my absolute favourite. There’s something about that hint of cocoa and deep crimson colour that makes it an absolute delectable delight. I love it even more around this time of year, because who can resist a red velvet cupcake that is so perfectly suited to Valentine’s day?
Now, I’m going to let you in on a little secret. I used to be an awful baker. No matter what I did something went wrong – especially with the seemingly fool-proof packaged cakes. The egg somehow always settled, leaving a nasty omelette crust on the bottom of a chocolate cake. Yes. Gross.
It wasn’t until I became vegan that baking and I got along. With the threat of omelette based cakes gone, I was able to make baked goods that tasted not only good, but amazing enough for vegans and non vegans alike to devour.
