Happy Monday everyone!
I hope your week started off on the right foot. Mine sure did! And that’s because I had a healthy, wholesome, DELICIOUS breakfast waiting for me.
During the weekend I eat pretty delectable breakfasts (yesterdays was pulled pork bennies) so nearly every weekday morning I keep it simple with muesli, and I always look forward to it.
The best thing about this breakfast (aside from being healthy and filling you up until mid morning snack) is how versatile it is. You can have it completely plain or throw in any sort of crazy combination of fruits, seeds and nuts you’d like.
Today I’m sharing my favourite version.
Ingredients
I don’t exactly measure how much of each item I put in as I like to change it up. Sometimes I make a huge batch to last me months while other times I make it each day. A good rule of thumb for measurements is 3 parts rolled oats to 1 part all the extra goodies.
Method
Step #1: Combine all ingredients, ensuring they’re mixed thoroughly.
Step #2: The night before, soak 3/4C muesli in 1/2C milk of choice.
Step #3: Cover and refrigerate overnight.
Step #4: Mix muesli and eat as is or topped with yogurt, fresh berries and/or honey!

Mmm – my favorite! I always have trouble NOT eating the ingredients as nibbly snacks beforehand, though. I haven’t tried soaking the ingreds. in milk the night before. I am going to. The muesli will be SO good with my yogurt. I’ve started eating plain yogurt – I enjoy it now.

I love muesli! We buy a locally made type by the case. Yours looks delicious! I swear the texture and crunchiness helps wake me up in the morning. 🙂
