Unlike August, I had a very successful #pinmakeeat this month. It was so great to get back to exploring new Pinterest recipes. There’s a few I already can’t wait to make again.
Lentil Tacos with Tomato Radish Salsa: We are huge fans of rice and beans, and by default huge fans of tacos. We keep a massive store of black beans on hand, and tortillas don’t last long in our house. But as much as we enjoy and eat tacos, never had we thought to put radishes in them. This is the beginning of a beautiful thing.
Ratatouille with Creamy Polenta: Rich stew foods with tomato sauces are one of my favourite fall dishes, and this one goes right to the top of the list. The cheesy polenta is a nice touch and goes so well with the veggies and sausage. Plus, it’s an excuse to cook with zucchini and eggplant – two vegetables I love but the mister loathes.
Chocolate Meringue Cake with Fresh Berries: A birthday cake for my papa’s 69th – it wasn’t nearly as difficult as I expected. I did bake the cake a little longer than I should have, resulting in it being a bit too dry, so I’d love to try again. What I loved most was how little sugar was in the cake, and how the crunchy meringue and berries sweetened up the intense chocolately goodness. Despite what massive chocolate bar brands would tell you, chocolate shouldn’t be sickeningly sweet. It should be rich, aromatic, and full.
Quick Homemade Ramen: You know how your olfactory senses are strongly linked to your memory? Making this dish, particularly soaking the shiitake, transported me right back to Japan. Tasted like it too. Mind you, we used somen instead of ramen which I don’t recommend (unless you add it in at the very end) as it breaks down far quicker and gets a bit goopy. But my gosh was this ever still delicious. There will be a next time, and it will be with ramen.
Olive Oil and Sea Salt Brownie Cookies: Rich, gooey, chocolately – need I say more? I made these out of desperation – I was fresh out of butter but needed to have cookies NOW. I was skeptical at first as when I taste tested the batter (hey no judging) it tasted overwhelmingly of olive oil. But that strong flavour completely dissipated when baked, leaving instead a dangerously addictive treat.

Um, what an awesome idea for a series! I agree with Amy, I pin way too many recipes without trying them out. I try to comment on the recipes I do try (on my own boards) to keep track, but this is just so fun to see a month at a glance.
I need to try those tacos! We’re huge taco fans (and black beans)

When I’ve made a recipe I simply edit the pin and write [made] on the end. Helps to keep track of just how much I’ve done, and how many more recipes I have to go!
Oh yes definitely do the tacos. They were delish.
