The fourth #PinMakeEat month was a little less successful than #3, and it had nothing to do with the food (which was all insanely delicious).
It’s been a bit of a crazy month. Coupled with one hectic/work filled week where we ate out way too much and the next week filed with a juice cleanse and a clear liquids diet, sadly there was little room to experiment with pinterest recipes. But we did squeeze in these 4 – one last night and the rest in the beginning of the month, two of which were on the same night…
Garlic Mushroom Quinoa: This combination can never fail, and this recipe is just so darn easy to whip up. Perfect for last minute dinner plans.
Roasted Potato Salad: I can’t get over how good this was. Seriously, SO GOOD. We didn’t have asparagus and swapped green beans instead, which was still darn amazing.
“Fried” Pickles: Such great snack food for a party. We altered the dip recipe though and used yogurt instead because a) health and b) mayo is nasty.
Fresh Vegetable Lasagne: This would have tasted much better if we hadn’t messed up. Béchamel sauce is harrrrrd.

Tan, I’m totally stealing this idea from you! Some friends and I used to have Pinterest Potlucks where we tried new recipes and tried them as a group. Maybe I need to revive that :)I’ve never tried making bechamel sauce but that lasagna looks TOTALLY worth it 🙂
