The third #PinMakeEat month and it’s still going strong! In fact, I averaged more than one pinterest dish a week (honourable mention to this delicious dish that I also made, but the picture was too tiny and ugly to share here).
What I’m finding most with #pinmakeeat is that the recipes on pinterest are generally of incredibly high quality. I haven’t had a total clunker yet!
Here are some notes on this month’s dishes:
Grilled Avocado: You better seriously believe I’m making these again, and probably all throughout the summer. I want to experiment with different herbs and add other toppings like goat cheese.
Soft-Boiled Eggs & Grilled Cheese: I love boiled eggs, I love grilled cheese. How did I never think to put them together before? Coupled with avocado on the side, this made a fantastic lunch. Though the egg whites were a little too soft boiled for my taste. I would have left it another minute or so.
Loaded Scalloped Potatoes: Being Portuguese, I never grew up with scalloped potatoes but always loved having them when I had dinner at my friends’ houses. I don’t know why it took me so long to realize that I’m an adult now and can make them for myself. This recipe may be the only one I ever make.
Roasted Apple and Brie Grilled Cheese: To be honest, this sandwich was far more work than I like to put into for a grilled cheese, and I omitted the mayo cause I can’t stand the stuff. But I did LOVE the thyme mixed in with butter and have done it for several dishes since then.
Potacos: How insane (and delicious) an idea is this? We went for traditional taco fillings in a sweet potato. Next time I want to use a regular potato as I found the sweet potato overpowered the flavour.
Brussels Sprouts Quesadillas: Call me crazy but I LOVE brussels sprout, especially when smothered in cheese and tortillas.
