Thrown together tacos…man I’m a sucker for alliteration.
What makes these guys so much healthier? Not much really to be honest. But there are three things:
#1 – Nonfat plain yogurt. It’s a little runnier than the sour cream staple, but it’s just as delicious with far less fat and just as much flavour!
#2 – Corn tortillas. They have a lovely, grittier texture and, let’s face it, we get enough wheat grain in our daily diet.
#3 – Coconut oil. This is pretty well all I cook with now. And it’s amazing. (I also use it as butter, but that’s another topic)
1kg Tillapia, fried in a bit of coconut oil with onions and chilli powder
8 small corn tortillas (either soft or tostada style as featured here)
1 avocado, cubed
8 cherry tomatoes, sliced
a bunch of cilantro, chopped
Salsa
Plain non fat yogurt
Basically pile it all on as you see fit and munch on down!
Warning: Not ideal for a first date. These do get messy!

The fish helps, too, compared to the beef slurry you get in most taco joints.
