Wow I’m in my fifth month of #pinmakeeat! How did that happen!? I did manage to cook an average of one meal a week last month plus a dessert despite being away for part of it. Go me! Okay not just me, the mister did a lot of the cooking too.
Sweet ‘n Smoky Bourbon Baked Beans:For father’s day we cooked him up a southern style meal complete with baked beans. I will forever be addicted to baked beans because of this recipe. Ryan wanted a bit more flavour, so he added BBQ sauce and mustard in the end, and then we baked it for an additional 20 minutes at 350. I’m ashamed at how much I ate that day. I just couldn’t stop myself! I’m drooling just looking at this picture.
Oven Roasted Baby Red Potatoes: Simple and fast, this recipe is great for adding a side dish. I just that crispy outside on chopped potatoes, don’t you?
Honey Chipotle Chicken Bowls: This was so good that we made it for dinner, and then made it for lunch the following day. In fact I’m probably going to have it again this weekend.
Quinoa Spinach Mac and Cheese: Don’t let the words quinoa and spinach fool you into thinking it’s healthy. But sometimes you just have to ignore all the butter and cheese and dive in, because hot damn this was delicious. Side note, we substituted kale for spinach – I highly recommend it!
Baked Chocolate Glazed Donuts: Shockingly easy, these were such a nice treat to whip up in the evening!
