The first month of the #PinMakeEat Challenge was a total success! Each week I made a different dish for dinner, and each one was absolutely delicious. It’s so nice to be able to say I actually make recipes that I pin!
It’s hard to choose a favourite of this group, so I’ll say for lunch it’s the spinach and artichoke grilled cheese and for dinner the slow cooker butter chicken. I’d like to try the coconut chicken again, but I’d broil it for the last 5-10 minutes to get it nice and crispy on top.

This one is made with coconut milk instead of cream, so it feels a little better eating it ๐

I’m always doing stuff off pinterest!! Latest stuff I tried from my “Yum!” board was a vegan taco salad (it was alright), a Dark Chocolate Chunk Coconut Key Lime Pound Cake (it was AMAZING), overnight oatmeals (jury still out), and baked donuts (yum!). I have a few I want to try soon, pending a visit to the Brazilian market. ๐

Definitely give it a go, but I recommend broiling it at the end to get it brown and crispy
