This is my fruit seasonal favourite time of year, when you get buy mangoes CHEAP by the case. You’ll often find me hovering over the kitchen sink sloppily munching down on this delicious juicy tropical fruit. Or, experimenting.
The other day at dinner time Ryan and I realized our mangoes needed to be eaten fast. Solution? Throw it on some chicken. The result turned out so good we had it two nights in a row.
Mango Salsa BBQ Chicken
It’s incredibly easy and fast.

Time: 25 minutes
Serves: 2
Step #1: BBQ 2 chicken breast to your taste.
Step #2: While the chicken is BBQing, slice up 1/2 a red onion, 1 avocado, 2 mangoes, 2 medium sized tomatoes, and a small bunch of cilantro.
Step #3: Mix all ingredients together in a bowl.
Step #4: In a smaller bowl, squeeze out the juice of 1/2 a lime. Add cumin and sea salt to taste (a pinch or so each) and mix with a fork. If you want a slightly asian twist, add a tablespoon of sesame oil.
Step #5: Add lime mixture to the larger bowl and mix until everything is coated.
Step #6: When your chicken is ready, place it on a plate and heap the mango salsa on top. The more the better.
Step #7: Devour. Perhaps with a gin and soda or mojito in hand.
Seriously. Go get yourself a case of mangoes now. And if this recipe isn’t to your taste just get messy and eat them over the kitchen sink.
