Christmas Ice Cream Cake

  • 1 700g panettone
  • 1.4 litre tub of vanilla ice cream
  • 1 box (226g) dark bakers chocolate
  • Icing sugar for sprinkling (optional)
  • Assorted festive ingredients for ice cream (choose to your liking):
  • - pistachios
  • - chopped apricots
  • - candied cherries
  • - pecans
  • - chopped dates
  • Other materials:
  • - medium sized bowl
  • - saran wrap
  1. Carefully cut the crust off the panettone then cut into 1 inch slices.
  2. Line your medium sized bowl with saran wrap. Place the panettone slices along the bowl to form a mold. Press the edges together so they seal. Save a couple slices to go on top.
  3. Freeze cake mold for 30-60 minutes
  4. Mix your chosen ice cream ingredients thoroughly with your vanilla ice cream. Pour the ice cream into the mold then place the large slice of panettone on top to completely cover the ice cream. Freeze for another 30-60 minutes.
  5. Melt the chocolate over a double broiler.
  6. Remove the cake from the freezer and flip onto a cutting board (or a plate), removing the saran wrap.
  7. Pour the melted chocolate on top and completely cover with a spatula.
  8. Sprinkle with a dusting of icing sugar and garnish with a decorative holly cluster (optional).
  9. Serve immediately, slicing with a knife that has been submerged in hot water.
